How to make ice "grow"?

i watched the japanese show "the wonder of horus", which is something like using science to make magic. there is one episodes where they put ice under running water and the ice is seen "growing" or expanding when contact with water. i think i heard the the explaination is about the height. you have to pour a certain height i think. is there an explaination on how this is done? they also pour water into a glass from a height and it freeze instantly. any explaination?
